Before long, the schooner was underway. George and Collett stood hand in hand at the stern railing with the other ship passengers, watching the water slide out from under them and separate the ship from the shore. They stood there until their kith and kin were only a blur in the ever-widening blue expanse of the great Atlantic Ocean. The scene became tranquil, the wind gently blowing in their face, drying their tears. The reality of their life choices was suddenly squarely on their young shoulders.

Shannon’s recipe corner
Welsh Tea Cakes (from my sister-in-law, Beth)
Ingredients:
2 cups white flour
1/3 cup white sugar
½ tsp salt
2 tsp baking powder
½ cup butter (cold)
½ cup currants rinsed and drained
1 tsp vanilla
2 eggs beaten together with fork
Directions:
Mix together flour, sugar, salt and baking powder.
Cut in cold butter till fully incorporated.
Add currents.
Mix eggs & vanilla & add to dry ingredients till it forms a dough.
Roll out on floured board to ¼ inch thick.
Cut with round (2”) cutter.
Fry on both sides in lightly buttered pan till done & lightly browned.
