He turned his attention to George. “Tell us why you would want to leave this beautiful country.” He paused for effect. As George was about to answer the question, the squire continued, “and our memorable history.” He pressed again. “You recall our history. The Norman lords founded this country. They built the beautiful Restormel Castle, the bridge and the Square Church Tower. Your Kinfolk were involved with those projects. The village grew up around the castle. The people living in the village had jobs at the castle.” He paused again. “It was known as the Lily of the Valley, the fairest of small Cities. It was the capital of Cornwall.”

Cloud Biscuits' with Clotted Cream and Preserves
Ingredients:
4 tsp yeast
2 tbps warm water 110-115 deg
5 cups flour
1/4 c (less) white sugar
1 ½ tsps salt (Kosher)
2 tsp baking powder
1 tsp baking soda
2 cups cold butter
½ cup cold Crisco
2 cups buttermilk
Directions:
Place yeast in water and stir to dissolve. Combine dry ingredients in bowl and whisk together. Cut butter and shortenings into cubes and add to dry ingredients. Use fingers to break up chunks to the size of peas. Stir yeast into buttermilk and add to flour mixture.
Stir with fork till a rough dough forms and all flour is incorporated. Sprinkle some flour on counter. Dump dough on flour and pat into a rough rectangle about one inch thick.
Fold the dough in half and rotate 90 deg. Pat the dough into another rectangle and rotate.
Do this two more times. Do not pat too roughly, just enough to get the dough to one inch.
Dip a two inch round cutter into flour and cut out biscuit rounds. Do not twist the cutter.
Place on parchment lined sheet pan. Cover with plastic wrap. Let rise one hour. Brush biscuits with melted butter (gently). Bake 400 deg 16-18 min or until golden brown.
To Serve:
Cut biscuits in half. Spread with favorite jam or preserves. Top with clotted cream or Crème Fraiche.
